Do You Like Cookies? Yes I like Cookies!

I had some time off work earlier this week.  Time off work coupled with a MAD craving  resulted in the creation of Oatmeal Chocolate Chip Cookies. My craving definitely stemmed from the holiday tease of Thanksgiving.  Thanksgiving got me thinking about all the fun Christmas activities including yummy Christmas Cookies!   I hit the kitchen running and made these as an homage to Santa and one of my Christmas favorites.

The Oatmeal Chocolate Chip cookies were easy to make.  They were thin, soft, chewy and full of delicious chocolate flavor. The original recipe called for fast-cooking regular oatmeal", however I didn't have any regular oats lying around the house. (I'm a fan of the Quaker instant)  I substituted instant Apple Cinnamon Oatmeal and the cookies turned out just fine!  I think the slight taste of Apple had people questioning whether there  were raisins instead of chocolate chips in this oatmeal cookie.

I hope these cookies inspire you all to create your favorite Holiday treats!  I LOVE cookies at Christmastime, but I know it's back to cupcakes for me!
